BISCUIT TOPPED STEW MAKES 8 SERVINGS. 1/2 cup plus 3 tbs flour 1 1/4 tsp salt 1/2 tsp black pepper 2 pounds boneless beef short ribs, cut into pieces 5 tbs oil 1 large onion, chopped 1 large carrot, chopped 1 celery rib, chopped 1 garlic clove, minced 2 tbs tomato paste 6 cups beef stock 1 tsp poultry seasoning 1 bay leaf 4 large carrots, cut into pieces BISCUIT TOPPING--- 2 cups biscuit/baking mix 2/3 cup milk Heat oven to 350 degrees. In a bowl, mix 1/2 cup flour, 3/4 tsp salt and pepper. Dip ribs in flour mixture. In a pot, heat 3 tbs oil. Brown beef. Remove from pan. *In pan, heat remaining oil. Add onion, carrot and celery, cook until tender. Add garlic, cook 1 min. Stir in tomato paste and remaining flour. Stir in stock. Return beef to pan, stir in poultry seasoning, bay leaf and remaining salt. Bring to a boil. *Bake 1 3/4 hours. Stir in carrot pieces. Bake 45 min. or until beef is tender, remove bay leaf. In a bowl, mix biscuit mix and milk until a dough forms. Drop by 1/4 cupfuls over beef mixture. Bake 45 min. or until topping is golden brown. SERVE & ENJOY...
