BOEREWORS, PAP EN SOUS This month we are bringing our favourite braai (bbq) recipes and accompaniments to the great meat normally found at braais. Boerewors (sometimes just referred to as wors), pap en sous is a truly traditional South African meal. Boerewors is a spicy all-meat sausage made traditionally with beef, some pork and delicious spices. South Africans enjoy their wors with pap, a mielie (polenta) based porridge, and a delicious home-made tomato and onion sauce. YOU NEED: Boerewors, mielie pap, 1 onion, 2 cloves garlic, 1-2 ripe tomatos, 10ml sugar, 400g of tomato relish, 15ml tomato sauce, and 10ml soya sauce. WHAT TO DO: Cook your wors over a slowish fire until brown all the way through. Prepare the Pap: Spray a large pot with non-stick oil/butter. Add 4 cups of water to the pot and bring to a boil. Add 3 cups of mielie pap and 1 teaspoon of salt to the water and stir through till well mixed and smooth. Reduce the heat down to the lowest setting and cook slowly for a minimum of 20min. The longer it cooks the better, 1 hour is perfect. Preparing the sauce: Finely chop the onion, crush garlic cloves, finely chop the tomato and in a large sauce pan, fry in olive oil. Add the tomato relish, sugar, tomato sauce and soya sauce to the mixture. Flavour with salt and pepper and cook until the onion is cooked and you have a thick sauce. To serve: Place pap on plate, add a chunk of boerewors and top with sauce.
