BRANDY ALEXANDER PIE (Yield: 8 servings) 1 envelope unflavored gelatin 1/2 cup cold water 2/3 cup sugar 1/8 teaspoon salt 3 eggs, separated 1/2 cup creme de cacao 1/2 cup cognac 2 cups heavy cream, whipped 1 9-inch graham cracker crust Chocolate sprinkles In a medium saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Add 1/3 cup sugar, salt, and egg yolks, stirring until blended. Heat over low heat, stirring constantly, until gelatin dissolves and mixture thickens. DO NOT BOIL. Remove from heat and stir in creme de cacao and cognac. Chill until the mixture mounds when dropped from a spoon. In a medium bowl, beat egg whites until soft peaks form. Beat in remaining sugar until stiff peaks form. Fold into the gelatin mixture. Fold in 1 cup whipped cream. Pour into prepared graham cracker crust. Chill 4 hours or overnight. Decorate with remaining whipped cream and chocolate sprinkles.
