Bake of the day: Jammy Dodgers. Im dont bake biscuits/cookies often, mostly because they are a pain in the ass. But im pretty happy with the way these bad boys came out. Theyre pretty easy to make and not a lot of fiddling around is needed. Ingredients: 115g plain flour 30g semolina Pinch of salt 1/4 teaspoon of ground cinnamon 115g unsalted butter - softened 70g soft light brown sugar 1 egg yolk 1 teaspoon of vanilla extract 3-4 teaspoons of jam Recipe: Preheat oven to 180 °c. Sift the flour, semolina, salt and cinnamon into a bowl. In another bowl, beat the butter and sugar until creamy and soft. Add the yolk and vanilla and stir. Add both mixtures together and combine and a soft dough will form. Flour hands and divide the mixture into 12-15 small balls. Place balls onto a lined baking tray and flatten the tops slightly. Using the end of a wooden spoon, make a dent in each biscuit. Put in the oven for 10 minutes, then take out and fill each hole with jam. Put bake in the oven for another 10 minutes or until golden. Transfer at once to a wire rack and let them cool completely. (Will keep up to 5 days in an air tight container)
