Balayan, a relatively quiet town in Batangas, is known for several things. First is that unpretentious salty dip called Balayan Bagoong, proven to be a perfect sauce for a simple meal of steamed local veggies such as okra and talbos ng kamote. Second is the more ostentatious display held every June called Parada ng mga Lechon, in which the roasted pigs are presented with a flourish along the main thoroughfares by the more affluent members of community as a way of honoring their town patron, St. John the Baptist.
