Balsamic Pork Roast 1 large onion, sliced 2 1/2 pounds boneless pork loin roast 1/4 cup white sugar 6 tablespoons balsamic vinegar 4 tablespoons low sodium soy sauce 2 tablespoons ketchup 1/2 teaspoon black pepper 1/2 teaspoon salt 1 teaspoon garlic powder 1 teaspoon onion powder 1. Arrange onion slices evenly over the bottom of the pressure cooker and then place the roast on top of the onion. In a bowl, mix together sugar, vinegar, soy sauce, ketchup, black pepper, salt, garlic powder, onion powder and hot sauce; pour over roast. 2. Cover and set pressure cooker to high for 45-50 minutes. We used a frozen pork roast for this recipe. It was about 3 pounds. I checked the roast and it was not completely done at 45 minutes, so I cooked it for 5 more minutes. We served this with balsamic roasted cauliflower and loaded baked potatoes. It was delicious! There recipe was adapted from here: muffymartini/2011/12/pork-roast-supper.html
