Banana & Walnut Loaf Ingredients: 225g/8oz Wheatmeal 2 teaspoons Baking Powder 125g/4oz Margarine or Butter 125g/4oz Light Brown Sugar Few drops Vanilla Essence 1 Egg (beaten) 450g/1lb Ripe Bananas (mashed) 100g packet Chopped Walnuts Method: 1. Preheat oven to 180°C/350°F/Gas 4. Lightly grease a 900g/2lb loaf tin. 2. Cream margarine, sugar and vanilla essence together. Add the egg, bananas and walnuts and mix well. 3. Finally, stir in the flour and baking powder. Transfer to the prepared tin. 4. Bake for about 45 to 50 minutes or until firm to the touch. 5. Cool in the tin for about 10 minutes, then turn onto wire tray to cool. ________________________________________ A little girl asked her mother, "How did the human race appear?" Lemon Poppy Seed Loaf Ingredients: 225g/8oz Self Raising Flour 125g/4oz Margarine 125g/4oz Caster Sugar 3 Eggs 2 tablespoons Milk 1 teaspoon Vanilla Essence 2 tablespoons Poppy Seeds Grated Rind of 1 Lemon Glaze 175g/6oz Icing Sugar 1 tablespoon (approx.) Lemon Juice Method: Preheat oven to 170°C/325°F/Gas 3. Grease and base line a 900g/2lb loaf tin. Cream margarine and sugar together in a bowl. Beat in the eggs, one at a time, and next beat in the milk with vanilla essence. Gently stir in the flour until completely combined and finally stir in the poppy seeds and lemon rind. Transfer to the prepared tin and bake for about 45 minutes until golden brown and a knife inserted into the cake comes out clean. When baked, turn out onto a wire tray to cool. Mix icing sugar and lemon juice together to form a glaze. When the cake is cold, spread over the top of the cake. Almond Slices Ingredients: For pastry: 125g/4oz Plain Flour 50g/2oz Margarine or Butter Pinch of Salt Cold Water For topping: 175g/6oz Porridge Oatflakes 125g/4oz Margarine 125g/4oz Caster Sugar 1 Egg 1 /2 teaspoon Almond Essence Jam (preferably Apricot) Method: Prepare the pastry by sifting the flour and salt into a bowl. As always, have everything cold. Rub in the margarine until mixture resembles breadcrumbs. Add the water gradually, mixing to a stiff paste with a knife. Allow the pastry to rest until the oatmeal mixture is prepared. For the topping, melt the margarine in a saucepan. Remove from the heat and stir in the sugar, egg and almond essence. Add the oatmeal and mix well. Grease a swiss roll tin and line it with a thin layer of pastry. Spread on a thin layer of jam and then spread the oatmeal mixture evenly on top of this. Bake in a preheated oven at 220°C/425°F/Gas 6-7 for 20 - 30 minutes approx. until lightly browned. Cut into slices or squares while still hot. Allow to cool on a wire tray. Chewy Lemon Bars Ingredients: Base 175g/6oz Porridge Oats 75g/3oz Margarine or Butter (melted) 50g/2oz Caster Sugar Filling 50g/2oz Plain Flour 2 Eggs (separated) Pinch of Salt 125g/4oz Caster Sugar Juice and Rind of 1 Lemon Topping Icing Sugar Method: Preheat oven to 180°C/350°F/Gas 4. Line a swiss roll tin 28cms x 18cms/ 11" x 7" approx with greaseproof paper. Mix oats and sugar in a bowl. Add the melted butter or margarine and mix until all ingredients are moistened. Transfer to prepared tin and spread out evenly, then press down well. Bake in preheated oven for about 10 minutes. Meanwhile, put the egg whites into a clean dry bowl. Add a pinch of salt and stiffly beat. Gently fold in remaining ingredients. Pour filling over the partially baked base and bake for a further 20 minutes until set and golden brown. Remove from oven and dust with icing sugar. Cut into bars!
