Banana plant pith (vazha thandu) Ingredients: 3 cups diced pith (see below) 1 tablespoon coconut Oil 2 whole Red Chillis 1 teaspoon Mustard seeds ½ teaspoon Turmeric Powder 3 green chillies(slit) 2 garlic cloves crushed Salt to taste 3-4 table spoon grated coconut& curry leaves HOW TO PEEL THE PITH Take the pith and cut lengthwise the outer shell. Remove the shell by pulling apart. Keep on removing the shell, there may be more than one. Once you reach the core, peel it very carefully from the surface. Now Cut the pith into round slices, while doing so, lots of thread like fibers will come out, remove that by spindling it on your finger tip. Now Cut the Circles into long strips. Further cut it into small dice. Now put diced pith in a pan, add some salt to it and leave for 10 minutes Salt will help to release water, squeeze the pith to take out the water Heat oil in a Kadai ,add mustard ,curry leaves, garlic and the green Chillis. Add the pith and cook for some time. Add Turmeric Powder and salt. Cook for some time over medium heat, if it becomes dry and start burning at the bottom , add about one cup of water or else leave it to cook from its own juice After cooking add grated coconut. Transfer to a platter and serve hot with Rice and curry .(I used banana leaf platter for serving) Pith has lot of fiber and hence it is healthy.
