Banting is a lifestyle set around eating as near to no carbohydrates as possible, moderate protein, and lots of fat. Tim Noakes emphasises time and again that eating lots of vegetables is vital. Getting enough protein is easy, so easy that most of us overdo the protein in our diets. Ive found that the solution for me is to make at least one vegetarian meal a day. Breakfast is high protein, lunch mostly vegetables, and supper relatively light, perhaps full cream yoghurt with nuts and a few cranberries. Here are two vegetable meals that I have found very tasty and satisfying - gem squash and brinjal curry, and a veg roast with a cheese topping. Both have lots of fat so one is not inclined to overeat - half the battle won! The curry is done in my all-time favourite ceramic frying pan (from Mr Price Home). The recipe requires no masala! I was told how to do it by a Tamil friend, and its quick and easy, and really delicious. Have with cauli-rice or on its own. The veg roast is also so easy - I bought the roasting veg tray from Spar, took out the potatoes, added a few pieces of sweet potato (have to be disciplined!), drizzled olive oil over them, added my favourite spices, and roasted at 160 for about 45 minutes, stirring a couple of times. Then I added the cheese and put it back into the oven till it was well melted. Voila! :D
