Be Aware to care for your body and buy Ceylon Cinnamon!! If you live in North America or Europe that jar of cinnamon in your cupboard is probably not truly cinnamon at all, but a very similar spice known as cassia or bastard cinnamon. True cinnamon is usually labeled Ceylon cinnamon and comes principally from Sri Lanka, India, Madagascar, Brazil and the Caribbean. Cassia, on the other hand, is often designated as Chinese cinnamon or Saigon cinnamon and comes principally from Indonesia, China, Vietnam, Japan and Korea. Ceylon cinnamon possesses outstanding health benefits and is more expensive and more difficult to find, where most spices labeled cinnamon are actually the cheaper cassia. Ceylon Cinnamon is sweeter, lighter and more refined than cassia. Due to the presence of a moderately toxic component called Coumarin in Cassia Cinnamon, European health agencies have recently warned against consuming high amounts of cassia. What is Coumarin? Coumarin is known to cause liver and kidney damage in high concentrations. True Ceylon cinnamon has negligible amounts of coumarin. The advice for people is to stop using casssia due to it medical impact on liver. Ceylon Cinnamon has between 2-5 ppm of coumarin compared to Cassia (2000-5000 ppm). Taste: real Cinnamon is sweet and delicate with subtle notes of clove, where as Cinnamon Cassia is strong to peppery Color: real Cinnamon is a tan color, whereas Cinnamon Cassia is a reddish brown to dark brown. Look: Real Cinnamon sticks curl from one side only and roll up like a newspaper. Forms multiple layers when rolled up. Cinnamon Cassia bark is thicker because its outer layer isnt stripped off. For that reason, Cassia sticks curl inward from both sides toward the center as they dry. Forms only a few layers when rolled up. Feel: The surface of Cinnamon Cassia is rough and uneven, whereas Real Ceylon Cinnamon bark is smooth. Touch: Ceylon is fragile and easily broken, Cassia is tough + difficult to grind and to powder.
