Been playing again. Mom and Dad need some change from my real, rustic breads and its been awhile since I baked some bread with a crisp but soft crust. This ones a Fresh Green Chiili and Kasuri Methi (dried Fenugreek leaves) bread. The dough (25% Bobs Red Mill 10 grain flour mix and 75% APF) ended up being a lot wetter than I expected. Had to have this ready for dinner and so turned it 4 times and let it ferment for 2 hours. Shaped it and let it proof in a cold Dutch Oven for 30 minutes. Scored it and baked it at 240C for 40 minutes with the lid and 10 minutes without the lid at 200C. Exceeded expectations despite the quick turnaround. Kicked about baking intuitively. There was just a hint of chilli and the mellow, earthy, methi (fenugreek) flavour that hung around on the palate. Next time, Ill add a few more chillies (3 werent enough) and stick with 3 generous pinches of the Kasuri Methi and let it ferment for about 4 hours. Happy. :)
