Black Bean Burger with Chipotle May Sauc Author: Homegrown & Healthy Ingredients For the Burger: •1 (16 ounce) can black beans •½ green bell pepper •½ small onion •2 cloves garlic, peeled •1 egg, beaten •⅔ cup whole wheat bread crumbs •1 T chili powder •1 t cumin •Salt & Pepper, to taste For the Chipotle Mayo Sauce: •1 cup mayonnaise •2 chipotle Chilies in adobo sauce •1 T adobo sauce •Juice of half a lime •Salt and pepper Instructions To make the Burger: 1.Drain liquid from the canned black beans. Place beans in strainer and rinse with water. Pat dry with a paper towel. 2.Place the bell pepper, onion and garlic in a food processor and process until finely chopped. Transfer mixture to a fine strainer to remove any excess water. 3.Place black beans in a bowl and mash well with a fork. Add the strained and chopped vegetable mixture. Mix in the chili powder, cumin and salt and pepper. Add beaten egg and mix. Mix in bread crumbs. Form mixture into 4 patties. To make the Chipotle Mayo Sauce: 1.Add all the ingredients to a food processor and puree. Season, to taste, with salt and pepper.
