BoB pork, apple and mustard casserole with cheese scone cobbler Sorry about the dodgy picture, the kids were starving so I didnt take a photo but it was awesome so I wanted to share! 1lb barrons diced pork 3 bruised eating apples 3 carrots 2 sticks of celery 1 red onion 2 cloves garlic crushed 1 heaped tbsp grain mustard 2 tbsp fresh tarragon 1 tbsp fresh thyme 1 tsp fennel seeds S + p Chicken stock pot 1tbsp plain flour 200 (ish) ml apple juice Scone cobbler: 250g sr flour Half tsp salt 50g diced cold butter 150g cheddar 150ml milk Fry pork to seal, remove from pan. Gently fry onion celery and carrot, add garlic, apple, herbs, fennel seeda and return pork to pot. Stir in flour and cook for 1 min. Add mustard and apple juice and stock pot and top up with enough water to cover and season. Put in low oven (gas 3) for 2 and a half hours. After 2.5 hrs crank oven upto gas 7 and remove lid from stew. Make scones ( sieve flour and salt, rub in butter, stir in cheese (reserve 2 tbsp to sprinkle over) then bring together with milk to form dough) and cut out, brush with milk/egg, sprinkle with remaining cheese and place on top of stew. Bake in hot oven for 30 (ish, keep checking!!!) Minutes. We had ours with roasted new potatoes. Both kids LOVED this!!! Xxx
