Bread of the day: Sweet Corn Salad. Greetings friends. With cooler temperatures decending upon us, there are numerous dishes that can be prepared to comfort us along the way. This weeks dish; Sweet Corn Salad is based on a recipe I came accross in last weeks New York Times. I love the ingredients, colors, and, its easy to prepare. To enjoy the salad, its important that you accompany it with great bread and wine! Ingredients: 1. 1 loaf of sourdough country bread. 2. Wine. Your choice. Me? Love reds. 3. Sweet corn. 4. 1-2 cloves of garlic. 5. Onions, thinly chopped. 6. Cherry tomatoes; halved. Some whole for garnishment. 7. Cucumbers; halved. 8. 1 egg. 9. Basil. 10. Olive oil. 11. Red or white wine vinegar. 12. Kosher salt. 13. Cheese. Process: 1. Make 1 loaf of sourdough country bread following the steps I have outlined in previous posts. 2. When the loaf is completely cooled, make the Sweet Corn Salad. 3. In a large saute pan, turn the heat to medium/high. When warm, place a generous amount of olive oil. 4. Add the chopped garlic and onion. Turn the heat down to medium. Sprinkle lightly wiht Kosher salt. 5. Stir periodically until the onions and garlic become translucent. 6. Add the tomatoes and cucumbers. Let sizzle for 2 minutes; then add the corn and sprinkle with red or white wine vinegar. Raise the heat just a little for several minutes. Mix thoroughly. 7. Add Basil. 8. Select a nice dish and scoop the Sweet Corn Salad on it. Add an egg, full cheery tomatoes and cheese. Friends, I present to you Sweet Corn Salad with Country bread and wine.
