Breakfast today! Banana and coconut loaf Preparation time: 15 minutes Ingredients: 2 OVER ripe bananas 1 egg Small handful Blueberries Handful shredded coconut 2 tablespoons cup coconut flour 1 tablespoon ground cinnamon 1/2 teaspoon baking powder Method: Place mashed banana in a bowl. Add 1 egg, coconut flour, blueberries and cinnamon. Stir all ingredients together. Place baking paper in a 15cm x 9cm loaf tin. Pour ingredients in loaf tin. Sprinkle more cinnamon on top.
