Buffalo Chicken & Potato Casserole Oh boy this was fantastic!!! Minus the cheese, its super healthy too. Heres my recipe yall 3 boneless chicken breasts, cubed (1) 10-15 medium red potatoes, cut in 1/2 cubes Seasoning amounts are all to taste (I used amounts I like) Salt Black pepper Smoked paprika Garlic powder Bacon & Chive seasoning, (I used envelope of generic brand) Celery seed Diced leeks Diced red onion Diced green bell pepper Finely diced red bell pepper Evoo Lots of Franks Buffalo Wing Sauce Topping: Shredded Cheddar or American cheese Sliced or shredded mozzarella (I sliced mozzarella sticks) Blue cheese crumbles Preheat oven to 500 degrees. Spray a large baking dish with cooking spray. In a large bowl mix together salt, pepper, smoked paprika, garlic powder, bacon & chive, celery seed, Evoo, and buffalo wing sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into the prepared baking dish, leaving behind as much of the mixture as possible. Bake the potatoes, covered for 20-30 minutes, stirring half way through, then uncover, and add the green bell pepper and red onion, stir and return to oven Uncovered, until cooked through. While the potatoes are cooking, add the cubed chicken and chopped red bell pepper to the bowl of the left over sauce mixture and stir to coat and marinate. (I had to make a bit more sauce to coat the chicken sufficiently) Once the potatoes are fully cooked, remove from oven and lower the temperature to 400 degrees. Top the cooked potatoes with the raw marinated chicken and the fine red bell pepper mixture and then add the leeks. Then return to oven for 15 minutes. Remove and top with the cheeses, return for an additional 10 minutes. Kickass Dinner is done! Cheers yall
