* Buffalo Drums with Blue Cheese Dressing Hot and spicy with a cooling, tasty blue cheese dressing. The drumsticks are roasted instead of fried. These are very tasty. Ingredients: * 12 chicken drums * 2 to 3 tablespoons rice bran oil * 2 teaspoons salt * Chilli Sauce * 3 tablespoons butter * 1 tablespoon hot chilli sauce * ½ teaspoon cayenne pepper * Juice from one lemon Blue Cheese Dipping Sauce: * 100grams blue cheese * 3 tablespoons sour cream * 3 tablespoons mayonnaise * 1 clove garlic – crushed in garlic crusher * 1 teaspoon Worcestershire sauce * 2 tablespoons lemon juice * Salt and pepper to season Preparation: 1. Pre-heat oven to 230 C. Line a baking tray with baking paper. 2. Make deep cuts in the flesh of each drum and lay drums out on lined baking tray. 3. Sprinkle liberally with salt and rice bran oil. 4, Bake for 30 to 45 minutes or until crispy and cooked through. 5. While the chicken cooks, make the sauces. 6. Hot sauce: Melt the butter and whisk in the hot sauce, cayenne pepper and lemon juice. Adjust to your taste. It should have plenty of heat in it, and the blue cheese dressing will mellow it out somewhat! Set aside. 7. Blue cheese dressing: Make the blue cheese dressing by whipping all the ingredients to a chunky sauce. Taste and add salt and pepper to season. Set aside. 8. Once chicken is cooked, put them in big bowl, pour over hot sauce and toss the cooked drums in the chilli sauce until well coated. Serve with sticks of celery and carrot and the blue cheese dressing. *
