Burek (or also named Börek, or Pita) is a fried or baked filled pastry that is made out of a thin almost transparent flaky pastry dough, commonly called phyllo or “yufka”. Burek (Börek) in Turkish language refers to any dish made with “yufka” and the name comes from the Turkish root “bur”- meaning to twist. It is one of its most significant and, in fact, ancient elements of the Turkish cuisine, having been developed by the Turks of Central Asia before their westward migration to Anatolia. Burek (Börek, pita) is very popular in the cuisines around the Mediterranean especially in North Africa and throughout the Balkans. It comes in different forms and versions depending on which country or region it’s from. In Serbia, Macedonia, Slovenia, Croatia, Bosnia and Montenegro, Burek is made by layers of dough with fillings like cheese, meat, spinach and potatoes in a circular baking pan.
