By now, it has been a year since I first started taking gluten out of my diet. I am not sure exactly what the date was ... but I know it was in the beginning of Oct. of 2013 when I started this new journey and what a journey it has been. I lost my job that I did love so much June of 2011. Looking back, I know I was sick and the worse was yet to come. I wasnt sleeping well, my feet were swelled, my calves were swelled. My blood pressure was getting high. I kept going to the doctor and he prescribed water pills, blood pressure pills. The water pills... all they did was make me have to run to the bathroom a lot, but the swelling just wasnt changing. Blood pressure dropped some, but not to a healthy set of numbers. And I itched... and itched... and itched... drove me nuts! The doc kept changing my prescription, hoping to find something that I wasnt allergic to... I finally just gave up on the pills all together... this was in 2013... after that, my blood pressure soared to dangerous numbers. I just didnt know what to do. I kept telling my hubby, I dont feel good :( my pain levels were sky high... started feeling nauseous every day... tummy hurting... tummy was so bloated... thought I had a huge tumor growing in my tummy... brain fog... if I could get to sleep, I would only sleep for an hour or two... was falling asleep while driving... I cant say enough at how bad I was feeling. I knew Celiac disease ran in my family and I did not want this to be my answer... but I just couldnt take it anymore... I looked up the symptoms of Celiac Disease and bingo! there it was... my hubby came home from work and I announced that I can not eat any wheat, rye, or barley anymore. He looked shocked and said... where did this come from? I said... I told you I havent been feeling good. I looked up the symptoms and I have Celiac Disease... it has been a roller coaster ride as I had to learn what I could tolerate and not tolerate. It turns out that I can not eat any grain... at least I feel my best when I dont eat any grain... I do eat gluten free from time to time... but 99% of the time, I am grain free... I also am allergic to corn and soy. recently started taking refined sugar out as well and this is when I started seeing the swelling in my feet and calves go down... yay! maybe soon I can finally where normal shoes. I have had to special order shoes that cost me $250.00... I will gladly retire when the time comes. When I can stay away from grain.. my pain level is way down. I use to be able to tell you when it was going to rain... but not no more. I sleep so much better now. Not perfect yet... but such a huge improvement... I even have a paper route now :) I know I could not even do this a year ago... but feeling accomplished that I have improved enough that I can help make some money again. my blood pressure was normal after 2 months of going gluten free. I hardly get accused of having deep blond roots lol guess the brain fog is better now. too. The bloating is down, but not gone yet. I want to buy Dr. William Daviss book, Wheat Belly to make sure that I am doing things right. So many have had such great success with his way of eating and I want to one day post my before and after photos :) I did think that I would have changed even more than I have... but there is lots of healing to go through To understand what was going on inside of my body when I was sick is that my body saw Wheat, corn and soy as a toxic enemy and would attack it. It damaged my small intestines to where I was not absorbing needed nutrients. It takes a minimum of 2 years for the gut to heal from this. There can also be friendly fire going on to where the body gets confused and sees good things as bad and starts attacking other parts of the body. Did you know that there are over 300 symptoms associated with this disease? and that people get misdiagnosed often with this? I follow Dr. William Daviss blogs on fb and I read the comments and its just amazing the things that people have overcome just following this diet... such as rheumatoid arthritis, diabetes, fibromyalgia (spelling?? spell check has no clue either lol) ... lupus... autism ... the list goes on and on... Sometimes, our ailments can be fixed... and not with prescribed pills. The pills are only to treat the symptoms... but to get to the root of what is causing them... that just might be up to you to take the reins and go for it... all you have to do is eliminate the food for a week and then try it and believe me, your body will let you know if it is good or not. by eliminating the cause, you can gain so much health back from it... and maybe you too will be saying... I feel so blessed that I do not have to live chronically sick no more :)
