CHANA BHATHURAS frm my page Maa Ke Haath Ka Khana Kitna Suhana Tha Woh Zamana My family loves chana bhaturas fr a heavy breakfast n so I keep making them every now n then CHANA BHATURAS... recipe... 250 gms white Chickpeas (kabuli Chana) 1 med.onion chopped 1 bay leaf n 1 black cardamom 2 tomatoes chopped salt to taste 2 tsp coriander powder 1/2 tsp turmeric powder 1 tblsp chana masala (optional but gives a good taste) 2 green chillies slit 1 tsp ginger paste 1/4 tsp garlic paste 3 tblsp oil 1 tsp cumin powder 1/2 tsp full cumin(zeera) 1 tblsp red chilli powder (more or less) 1 tblsp roasted chickpea flour (chana aata/besan) tamarind pulp 1 tbsp or aamchur powder 1 tsp(both as per ur taste) salt to taste garam masala pwdr a pinch. lime wedges n onion slices to serve Method..... Soak kabuli chana overnight. ,pressure cook the chana with enough water,cardamom,a pinch of ginger paste n bay leaf until soft , strain and keep aside. Heat the oil ,add full zeera n cut onion, stir fry until onions r transparent. add ginger, garlic paste and slit green chillies, stir for a minute, then mix in cut tomatoes, red chilli powder, coriander powder, turmeric powder, chana masala and cumin powder, stir fry for some time or till tomatoes r pulpy n soft. Mix in boiled chana and 1 cup of water and stir fry till chana gets coated with the thick masala.Add tamarind pulp n besan.stir well. Sprinkle garam masala and salt mix well,cook fr a minute and serve hot with lime wedges n onion slices on the side. note-if u want chanas to be black or dark in colour,just put a tea bag while boiling them. Bhathura... I know many versions of bathura but I find that this is the easiest one. Ingrs... 2 cups maida (refined flour) 2 tblsps sooji /(rawa)/ semolina soaked in 2 tblsps of water . 2 tblsps curds (dahi)yoghurt salt 1/4 tsp soda bicarb warm water as required Method -mix all ingredients n knead to a smooth dough .let it rest for atleast 1/2 an hour covered wth a muslin cloth. Now make dough balls,roll into puris/bhathura n deep fry . when u put the bathura in the oil it puffs up .at that very moment flip it ,then decrease the flame n fry till done. take it out in a strainer so tat the extra oil drips off .Do send the feedback if u try this recipe .Ask questions if any thru message on my page.
