CREAMY FRIED BACON POTATOES 3 LBS YUKON POTATOES (NO SUBSTITUTES) 1 1/2 CUP HEAVY CREAM 4 OZ. CREAM CHEESE 1 LB. BACON FRIED CRISPY 4 TBS. CHIVES (GREEN ONION TOPS) PEEL AND DICE IN ONE INCH CUBE POTATOES COOK FOR 13 MINUTES IN BOILING WATER IN SAUCE PAN ADD CREAM AND CREAM CHEESE, ON LOW UNTIL BLENDED. POUR IN POTATOES AND BLEND WITH MIXER ( LEFT SOME SMALL CHUNKS OF POTATO) PUT 3/4 OF BACON IN POTATOES AND 2 TB CHIVES. ON TOP DOT WITH WITH BUTTER, ADD REMAINING BACON AND CHIVES. NOTE: I MADE POTATOES UP THIS MORNING PUT IN FRIG. I DID NOT ADD THE BACON WILL DO THIS ONCE I REHEAT THE POTATOES AND READY TO SERVE FOR Victoria Larson :-)
