Cajun White Beans & Sausage By: David Triche 1/2 cup Vegetable Oil 1/2 cup All-Purpose Flour 2 (27 oz.) cans Blue Runner Original Cream Style Navy Beans 1 cup Water 2 large Onions, chopped 1 large Bell Pepper, chopped 1 bunch Green Onions, chopped 6 toes Garlic, chopped 1 lb. Smoked Sausage, sliced 1 link Deer Sausage, casing removed and finely diced 1 Tbsp. Cajun Seasoning 2 tsp. Garlic Powder 1 Tbsp. Onion Powder 1 tsp. Black Pepper 2 tsp. Hot Sauce In a pot, heat oil over medium heat. Add flour, stirring constantly until the color of peanut butter (roux). Add the onions, , green onions and garlic and cook until the vegetables are wilted, 10 - 15 minutes. Add water, smoked sausage, deer sausage, cajun seasoning, garlic powder, onion powder, black pepper and hot sauce and cook for 30 minutes. Add more water if necessary, but dont make it thin. Add white beans (navy beans) and bell pepper and cook another 30 minutes. Taste and adjust any seasoning if necessary. Serve over rice! The link sausage for this dish is Pattons Hot Sausage. Enjoy!
