Call me crazy but I actually enjoy cooking Thanksgiving dinner solo. The key to a stress free Thanksgiving is organization and planning ahead. Here are some tips for a stress free holiday: 1.) Write a menu 2.) Break down the menu into two categories; a shopping list and a prep list 3.) Buy the groceries you will need 5-10 days in advance. 4.) Utilize and incorporate ingredients you already have in your pantry into your menu. 5.) Start prepping 3-4 days in advance (chop onions, celery, garlic, cook bacon, sausage, etc and store in ziplock bags, pre-make casseroles/stuffing that can be easily reheated, thaw turkey if frozen and brine overnight if desired, make the dessert. Set aside dishes/platters etc that you are going to need. Set aside a little time each day to accomplish a couple of projects. In the culinary world this is called mise en place. 6.) On T-day determine what time to put your turkey in the oven depending on what time you want to eat. While turkey is cooking, finish the dishes that need to be made like mashed potatoes. Once your turkey is cooked, remove from oven and allow to rest for an hour. At this point reheat your casseroles, make the gravy. Have someone help you set the table or buffet line while you are cooking. 7.) Carve turkey. Arrange all food on platters. Dinner is served! Eat, drink, and be merry! Cheers!
