Camp Bread I know these look like grown up loaves, but theyre really from 3 x 5 pans. Im working on bread recipes to make when Im camping, and two of these little pans will fit in my 5 quart stainless Dutch oven for baking on coals or a camp stove. Im planning a 3-4 week boat camping trip to the backcountry of the Everglades later this winter, and going without bread is a bit much to ask, but fresh fish and fresh bread sounds pretty good to me. I premix the dry ingredients at home and store them in zip lock bags. I have three mixes so far. A yeast bread, yeast dinner rolls, and corn bread. All of these are, of course, home-milled grains. The bread is White Wheat, Red Wheat, Oats, and Corn, the rolls are White, Red, Corn, Oats, and Barley, and the corn bread is White, Red and a blend of different corn varieties that I grew this year. I use Instant yeast, powdered eggs, powdered milk, and powdered butter, all added into the mix. Then I can just measure out the right amount (I have to use measuring cups--Im camping after all :-) ) add oil and water, mix them in a bowl with a wooden spoon, give them some very minimal kneading, let them rise in the Dutch Oven near the fire or in the sun, give them a stretch and shape them into loaves, let them proof, and bake them in the Dutch oven with a heat diffuser in the bottom which the little bread pans sit on to prevent burning. Works quite well, but the tops dont brown as much as in the oven unless I put hot coals on top of the Dutch oven. I have made corn bread and rolls in a fry pan with a lid, but controlling the heat to prevent burning is tricky, so using the little pans in the Dutch oven is more controllable. The mixes work so well Ive been enjoying using them in the house. With the dry ingredients already mixed I can make cornbread in just a few minutes, or throw together two little loaves of bread, or dinner rolls, in no time at all. So, as Ive been testing all of this, instead of making multiple large loaves and freezing them, Ive been baking little ones more often using the mix.. I may put together a bread mix with baking powder instead of yeast for days in the bush when Im short on time or energy, but Ill appreciate the yeast bread when I have time to make it. So camping may be roughing it but it doesnt mean I have to go without good bread. Ill get the recipes up on my blog when I have time and put a note below..
