Caramel Apple Pork Chops 4 (1/2 to 3/4-inch thick) center-cut pork loin chops 5 tablespoons butter, divided 1/4 cup brown sugar 1/4 cup apple juice salt, pepper to taste 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 2 medium tart red apples, peeled, cored and sliced 1/2 cup chopped pecans Add 1 tablespoon of olive oil and 1 tablespoon of butter to large skillet and melt over medium high heat, sear pork chops on both sides quickly. Chops should be nicely browned. Set aside in warm oven or tent with foil. In same skillet, add another tablespoon of butter and scrape bits off bottom of pan with wooden spoon. Pour in apple juice and simmer until reduced by half. Add remaining butter, brown sugar, apples, cinnamon, and nutmeg. Simmer until apples soften and sauce has thickened. Add salt, pepper and pecans. Serve sauce over warm pork chops.
