Carolyn Baner, Pennsville, New Jersey Moist and Creamy Coconut Cake 1 box yellow or white cake mix 1 box instant vanilla pudding (3.4 ozs) 1 cup water 1/3 cup vegetable oil 4 large eggs 1 teaspoon coconut extract Mix all ingredients together I add ¼ cup shredded coconut to the batter, mix in by hand, and pour into pan of choice that has been greased and floured. Bake about 20 -25 minutes. Until center bounces back when touched. FROSTING I use my (Karole) butter cream icing 1 stick of butter Approx.. 2 cups powdered sugar 1 tsp. vanilla, , 1 tsp. coconut extract, and milk for proper consistancy. Then sprinkle liberally with flaked coconut
