Carrot and Chia seed muffins 1 cup self raising flour sifted 1/2 cup brown sugar 1 teaspoon cinnamon 2 eggs 160ml extra virgin olive oil 2 cups grated carrot 1.5 tablespoons chia seeds (I used white) Method: 1. Preheat oven to 180. Grease 8 1/2 cup muffin pan holes. Combine the flour, sugar and cinnamon. 2. Combine the eggs with oil and add to the flour mixture, stir in carrot and chia seeds and mix until combined. 3. Divide mixture among the muffin pans and bake for 20-25 mins until a skewer inserted comes out clean. Remove from oven and rest for 5 minutes before turning out onto a wire rack to cool completely.
