Castlemead Christmas menu 2014 Roasted carrot & fennel soup, served with crème fraiche & herb croutons (v). Grilled Goats cheese, topped with pecan nuts & a sweet amoretti glaze (v). Parma ham, rocket & fresh fruit salad, served with a pomegranate dressing & Black pepper. Castlemead’s Seafood platter, smoked salmon, potted shrimps, crevettes & a mini crab cake, served with fresh tartare sauce & salad. Smoked mackerel & dill pate, served with wholemeal toast, local spiced chutney & lemon wedges. Whole trout, baked in a parcel with, fresh herbs, lemongrass, star anise, garlic & caramelized lemons, served with hollandaise sauce. Simple sea bass fillet, pan fried with lemon, rosemary & sea salt. Roast Pembrokeshire turkey, stuffing, pigs in blankets, roast potatoes & gravy, cranberry sauce. Medallions of welsh beef, served with wilted spinach, black pepper & sherry sauce. Honey roast ham, with a honey, mustard & cider sauce. Sweet leek lasagne, with roasted butternut squash, creamy ricotta, fresh spinach & mozzarella cheese (v). Wild mushroom tortellini, tossed in brown butter, with garden herbs & black pepper, topped with fresh parmesan cheese (v).
