Celiac Disease David Hoppe Celiac Disease is a digestive and autoimmune disorder. An autoimmune disorder is one in which the immune system directs antibodies to attach the body. The antibody of celiac disease is directed against gluten, a protein found in grains. Celiac disease affects an estimated 3 million Americans. If you are diagnosed with Celiac Disease, you can not eat any foods that contain gluten (including wheat, rye, barley and oats). Dropping gluten from your diet usually improves the condition within a few days and eventually ends the symptoms of the disease. Symptoms of celiac disease include: - Digestive problems (abdominal bloating, pain, gas, diarrhea, pale stools and weight loss) - A skin rash (dermatitis herpitiformis) - anemia (low blood count) - Musculoskeletal problems (muscle cramps, joint and bone pain) - Tingling sensation in the legs If you have Celiac Disease you can still eat a well-balanced diet. Bread and pasta made from non-gluten flours such as potato, rice, corn and soy are available. You can also eat fresh foods that have not been artificially processed such as fruits, vegetables, meat and fish, since these do not contain gluten. In August 2013 the FDA defined gluten free as containing less than 20 parts per million of gluten. All gluten free labeling must comply to this standard.
