Chargha ---------- Ingredients -------------- - Chicken whole about 1 k.g (without skin) - yoghurt one cup full - ginger garlic paste 1 and half table spoon - red chilli powder one and half tea spoon ( yo can add more or less as per taste) - cumin powder 2 tea spoon - black pepper powder half tea spoon - garam masala powder (included cinnamon, cloves, black cardamom, jautri and nutmeg powder) one tea spoon - lemon juice or vinegar 2 table spoons full - red food colour half tea spoon - salt as per taste - carom seeds powder (ajwain) one pinch - oil two table spoons Cooking Method ------------------- wash chicken and slightly make little cuts on surface around to absorb marinade. or you can do it with fork too if you dont like cuts on chicken. mix all ingredients in yoghurt, check salt and spread marinade around chicken cover your whole chicken generously with this yoghurt marinade. leave for 7 to 8 hours or whole night for good results. now bake on slow heat or steam in pan for half hour or when chicken became tender (check with skewer). juices of chicken will be dry when chicken well done. collect marinade from pan surface or baking pan or sheet if didnt burned and spread this over chicken otherwise leave as it is. serve with raita, salad, (chapati or roti, nan, rice, paratha, poori, pita, khubs) as your like.
