Chatting here with Alastair Horne earlier, about cooking large quantities so the freezer can be stocked with home cooked meals, made me feel like cooking. I had bought a discounted 2 kilo top rump of beef, much too big for me to roast & eat. So I cut a third of it to roast rare for dinner tonight, and while it (and potatoes) was roasting I made a rich red wine casserole from the rest. A luxurious casserole with caramelised onions, bacon, garlic, small carrots, celery, thyme & many mushrooms. All ingredients that were already in my fridges. Cooking two separate dishes at once (that will provide at least 6+ other meals from the freezer) while listening to Handels opera Alcina. Multi-tasking again! very satisfying. Now off to eat that rare roast beef with roast whole clove garlic.
