Check out this Health Tip that I just saw on the iOS app Health Tip of the Day: "It is a good idea to leave the peels on most organic fruits and vegetables (celery, apples, cucumbers, carrots, etc.) before eating them. Peels contain additional healthy fiber, nutrients, sodium and potassium- all beneficial for good health if the food has not been sprayed with pesticides or chemicals. To maximize nutrient absorption, leave your organic foods as "whole" as possible."
