Cheesy stuffed mushrooms with roasted pepper cous cous and chargrilled veg This is not what I had planned for tea at all but I totally forgot to take anything out of the freezer this morning. I had quite a bit of veg in the fridge but not much else. So heres what I came up with. You will need: Mushrooms Clove of garlic Handful if grated cheese (I used a combination of cheddar and Parmesan) Crust of bread Peppers Onion Cous cous Asparagus Courgette Chop peppers and onions, drizzle them with a little olive oil and roast in a hot oven for around 25 mins. Pull the stalks out of the mushrooms but dont throw them away! Blitz them up with bread crust and garlic. Mix in grated cheese and use the mixture to fill the mushrooms. Bake in the oven for around 15mins. Thinly slice the cougette lengthways, brush with oil and season with salt and pepper. Lay the cougette slices and asparagus on a smoking hot griddle pan (or frying pan) and open a window. Cook for 2 mins each side. Make up your cous cous according to the instructions on the packet (I like to add a teaspoon of bouillon for flavour). Add the roasted peppers and onions to the cooked cous cous. Enjoy Rosie x
