Chef Garfield’s signature dish….. “TACO-SHIMI” Slices of seared Ahi tuna on top of Mexican-style avocado salsa, wasabi cream, teriyaki and a taco chip. Created by 2 of the most influential chefs of my career, both being very strong mentors, it was originally served on a wonton chip with pickled ginger, but over the years I have it has evolved and become much more refined. I can never take the credit for the creative name, but I can take partial credit for its evolution and refinement since I first tried it in 2002. When I was heading the kitchen at a Japanese Izakaya bistro in Beverly Hills I was working with premium Japanese ingredients and all Latin American staff on my team. This is the delicious collision of the 2 diverse cultures brought directly to your plate- enjoy!
