Chef Jeanne Theriault is home from vacation and back in the kitchen! Canning season has begun and we have been taking advantage of the summers bounty of fruit. First in the canning line up is Watermelon. Weve tweaked our current preserve recipe and weve been testing a few new blends with both basil and mint (individually of course). The recipes for Watermelon Jelly and Pickled Watermelon Rinds and been finalized. Were back in the commercial kitchen next week to begin production for our fall markets.
