Chicken Casserole 4 Tablespoons butter 1 large onion, chopped 1 cup chopped celery 2 regular-sized boxes chicken flavored Rice-A-Roni 4 cups (large carton) chicken broth 2 10 oz. cans white chicken, drained 1 can cream of mushroom soup 1 can cream of chicken soup salt pepper shredded cheddar cheese In a large saucepan, melt butter; add onion, celery and cook until onion is translucent. Add uncooked Rice-A-Roni and seasoning packet and mix with butter, onion, and celery. Allow to cook for 3-5 minutes while stirring constantly; add large carton (4 cups) chicken broth; bring to boil, then cover and reduce heat to simmer until rice is tender; Add chicken, soups, salt, and pepper and mix into the rice; pour into greased 13 x 9 pan and top with cheese; heat in the oven until bubbly and cheese is melted Hope you enjoy this Barbara Dunlap Knapp and Cindy Wood.
