Chicken, bacon and avocado stuffed pepper. 1x cooked chicken breast 1/2 avocado 3x bacon slices 1x whole red pepper 2x tablespoons of cottage cheese 1x teaspoon of extra virgin olive oil Salt and pepper Cut bacon into small pieces and place into pan. Once cooked off leave to dry. Cut the chicken and avocado up thinly and add to a bowl with the bacon. Season with black pepper. Then neatly cut the top of the red pepper off and sprinkle sea salt and place in the oven at 180 degrees for 5-10 minutes. Take the pepper out of the oven and drizzle with extra virgin olive oil and stuff the pepper with the chicken, bacon and avocado. Add two spoonfuls of cottage cheese and presto!
