Chicken embueltos.... Yummy..you will need an original rotisserie chicken shredded... 2c. Of chicken stock.. Corn tortillas yellow or white...Sharp shredded cheese , lettuce and tomatoes..1 can of tomatoes sauce..2 Tbls of corn starch.. Shred chicken put in pan and add salt and pepper 1/3 cup of oil toasted a lil to heat put aside.. Heat the tortillas in oil soft must be able to roll ... Get a sauce pan add the 2 c. Of chicken stock and 1 can of tomatoe add salt and pepper and the corn starch simmer till thick and coats the back of spoon..set aside ..now get tortillas stuff with chicken and roll like enchiladas.. One you have 3-4 on plate add shredded lettuce and tomatoes then cheese ..Next pour your sauce on top!! And your done.. Its amazingly delishious!!
