Chicken rice sushi 1 knob, ginger peeled, 2 cloves garlic peeled, 4 shallots, 1 tbs veg oil, 1 cup of rice washed, 2 boneless chicken legs, skin removed, 1 tbs salt, 2 zucchinis, thinly sliced lengthwise, garlic chilli to garnish. 1) grate the ginger and extract juice, discard pulp. 2) pound the garlic and shallots together till fine and then stir fry for 3-5 mins or until mushy. Remove from heat and add in ginger juice. 4) transfer the rice mix into rice cooker and cook. 5) season the chicken with salt and steam for 10 mins. 6) in the meantime, mould the cooked rice into 15 sushi. 7) cut the chicken into bite sized chunks and top the sushi with them, 8) wrap a slice of zucchini around each sushi and top with garlic chilli
