Chocolate Meringues 2 large egg whites 2/3 cup sugar 1/3 cup DCD Cocoa Powder 1/2 teaspoon ground cinnamon 1/2 teaspoon almond extract 1. Preheat the oven to 250°F. Prepare two baking sheets with parchment paper. 2. Beat the egg whites with mixer at medium speed till soft peaks form. 3. Gradually add the sugar, beating until stiff peaks form. 4. Fold in the cocoa, cinnamon, and almond extract. 5. Fit a pastry bag with a 1 1/2-inch star tip. Squeeze out generous rosettes spacing 1 inch away from each other on the prepared baking sheets. 6. Bake until crisp and dry to the touch, about 50 minutes.
