Cilantro Garlic Lime Shrimp Salad with Roasted Corn & Jalapeños {with Clean Homemade Salad dressing!} For the shrimp: Cilantro Garlic Lime Shrimp Serves 4 Simple Directions: 1. Preheat oven to 375 degrees 2. In a large bowl combine: 1 lb large raw shrimp peeled & deveined, tails on (rinsed & pat dry) 2 Tbs olive or melted coconut oil 1 bunch coarse chopped cilantro juice of 2 limes 4 cloves minced garlic 1 tsp sea salt 3. Combine all ingredients, lay on flat sheet pan. 4. Bake 10-11 minutes in your preheated 375 degree oven until shrimp are fully cooked Roasted Fresh Corn & Jalapeños Recipe: This is goes on the salad. It smells so good while roasting! Preheat oven to 350 degrees f 4 ears of fresh corn, corn removed from the cob 4 medium jalapeños, seeded & sliced into rings 2 Tbs extra virgin olive oil sea salt to taste Combine well, lay on flat sheet pan, roast in preheated 350 degree oven for about 20 minutes. Perfect. Simple Cilantro Lime Dressing: 1/4 cup extra virgin olive oil 1/4 cup apple cider vinegar 2 Tbsp water Juice of 2 fresh squeezed limes 2 cloves garlic minced 1-2 Tbs chopped cilantro, depending on preference 1 tsp sea salt {Whisk or blend well, Serve immediately} Arrange everything in a bowl with fresh veggies, cherry tomato, and avocados, the dressing on the side.
