Cinnamon Sugar Donuts (Makes 25) 1 egg 80 ml (⅓ c) caster sugar 125 ml (½ c) milk 500 ml (2 c) flour, sifted 2 ml (½ t) baking powder oil for deep-frying cinnamon sugar to coat 1 Beat the egg and caster sugar until pale. Pour in the milk, whisking until incorporated. 2 Gradually add the flour and baking powder. 3 Heat oil over medium heat until hot. Add spoonfuls of the batter to the hot oil in batches and cook for 3 minutes or until golden. 4 Remove with a slotted spoon and drain on paper towels. While the doughnuts are still hot, roll them in cinnamon sugar to coat.
