Coca raisin cookies. Hoping this will get Ken Pollard to post more baking pictures. Cocoa Oatmeal Raisin Cookies 1 cup (1/2 lb.) butter, softened 3/4 cup firmly packed brown sugar 2 eggs 1 teaspoon vanilla 1 1/2 cups all-purpose flour 2 teaspoons baking soda 1 teaspoon salt 2 1/3 cups rolled oats 1 1/2 cup mixed raisins (Winco has a nice mix in their bulk food bins) 1/2 teaspoon ground nutmeg 1/4 cup cocoa In large bowl of an electric mixer, beat butter and brown sugar until creamy; then beat in eggs and vanilla. In another bowl, stir together flour, baking soda, cocoa, nutmeg, and salt; gradually add to butter mixture, blending thoroughly. Add oats and raisins; stir until well combined. Preheat oven to 350 degrees. If preferred, line cookie sheets with parchment paper. Drop dough by rounded tablespoons, spacing about 2 apart. Bake 18 to 20 minutes, until edges are golden brown. Transfer to racks and let cool. Store in an airtight container. Makes 2 1/2 to 3 dozen. The recipe was adapted from an old Cookies book I have. I reduced the sugar and added the cocoa. Its still a little sweet for my tastes, and Id be inclined to increase the cocoa a little more. Theyre a little crumbly just out of the oven, but firms up once cool.
