Cooking temp question - most folks claim 180-185 is needed for Pork to be safe. I watch a show called Americas Test Kitchen - they said that back in the day that was true - but that just like many other farming practices - things have changed and pork is now leaner and cleaner than it was when that temp was established. Their recommendation was to remove from the oven when internal temp is 165 and that it will be safe and continue to rise in temp if covered and left to sit for 20 min. Anyones thoughts?
