Cooler weather has arrived along with shorter days. Cold days means that a hot and hearty meal is more than welcome. As soon as I found this recipe I had to try it and it did not disappoint. The soup is substantial and perfect with a few dashes of Franks Red Hot Sauce for an extra kick. Bacon Cheeseburger Soup INGREDIENTS 1 lb lean ground beef 1 ½ cups of water 2 cups of diced potatoes 2 small carrots, grated 1 small onion, diced 1 small green pepper, diced 1 beef bouillon cube 1 garlic glove, minced 2 ½ cups milk 3 Tblsp flour 1 cup grated cheddar cheese 6 slices of bacon, cooked crisp and crumbled PREPARATION In a heavy saucepan, brown the ground beef and drain the fat. Add the water, potatoes, carrots, onion, pepper, beef cube and garlic. Cover and bring to a boil and simmer for 20 minutes or until the potatoes are tender. Add the 2 cups of the milk, heating through. Combine the flour and remaining ½ cup of milk, mixing into a smooth paste. Slowly stir into the soup and bring it back to a boil until thickened. Reduce the heat and stir in the cheese until melted. Sprinkle the bacon on the bowls of soup just before serving.
