Cornbread Dressing 3 cloves garlic, minced 1 lg onion 1-6 stalks of celery ¼ c vegan margarine 4 c cornbread or 2 c cornbread + 2 c french bread, cubed ½ t sage ½ t thyme 1 t parsley ½ c mushroom broth or mushroom liquor 4 oz crimini mushrooms, sliced ½ oz dried porcini mushrooms ½ oz dried shitake mushrooms ½ oz dried chanterelle mushrooms Preheat oven to 350* Toast bread 15-20 minutes Reconstitute dried mushrooms in boiling water or mushroom broth, cover and let sit 30-60 minutes. Sauté garlic, onion, & celery in margarine until translucent, but not browned. Add bread, sage, thyme, parsley, & broth or liquor. Bake in a greased baking dish about 35 minutes or until golden brown.
