Courtesy of Rebas Kitchen AUGRATIN POTATO CASSEROLE - thinly sliced potatoes with onions, peppers, turkey sausage, cream of mushroom soup, splash of milk, creole and Italian seasonings and cheddar jack cheese...garnish with parsley flakes. AUGRATIN POTATO CASSEROLE Cook Time: 60 minutes Ingredients: •2 pounds small white potatoes, scrubbed and thinly sliced •8 to 12 ounces turkey sausage, sliced •1 tablespoon butter •1 medium onion, chopped •1 medium bell pepper, red or green, chopped •4 tablespoons butter •1 can of condensed mushroom soup •1/4 cup milk or water •6 ounces shredded Cheddar or Cheddar Jack blend cheese, divided •1/2 teaspoon Cajun spice blend •1/2 teaspoon dry Italian seasoning •1/4 teaspoon ground dry mustard •1/4 teaspoon ground black pepper Preparation: Heat oven to 350°. Butter a 2-quart baking dish. Melt 1 tablespoon of butter in a medium saucepan over medium-low heat. Add the sausage, onion, and bell pepper; cook, stirring, until the onion is soft. Transfer the vegetables to a plate and set aside. In a large mixing bowl, add sliced potatoes, cream of mushroom soup, milk or water, half of the cheese and all the spices. Mix all ingredients together and transfer to the baking dish and bake for 45 to 60 minutes, or until hot and potatoes are fork tender. Spoon out any excess oil.
