Crawfish Stuffed Pistolettes (My recipe is seriously so easy. You can do 2 dozen Pistolettes in under 60 minutes) 1/2 of container of fresh chopped seasoning blend (trinity) 2 frz. pkgs. of crawfish tails 2 tbls. Italian bread crumbs 1/2 of a sm. can of evaporated milk 3/4 sm. block of Velveeta cheese 3/4 pkg. cream cheese 1/2 cup jarred diced jalapenos 2 bags of pistolettes (will make 24) Vegetable oil to fry them in I do not add salt because I feel the cheese is salty enough but season to your taste It takes me about 45 min. to make these but it may take you longer on your 1st batch Put vegetable oil in a pan, maybe about an inch high (enough to float the pistolettes when frying) and have it warming to fry. Youll end up having to add more oil for the second batch of Pistolettes . Saute trinity in separate pan until browned, then add the Velveeta (cubed), cream cheese, & evaporated milk. Stir until melted. Then add the jalapenos & bread crumbs. Rinse the tails 1st in a colander (I squeeze them to get the fishy smell out & the water) and add to the sauce. While this is simmering on low, start frying the pistolettes, turning them to brown each side (you will occasionally need to add more oil). Setting them in a paper towel lined pan to cool down. When able to hold them in your hands, use a small spoon and insert it into the end of the pistolette making a hole (I move it around in there a little bit to create some space), then scoop sauce with the spoon and fill pistolettes (usually about 3 to 4 scoops). Place them with the open end facing up so the cheesy goodness doesnt leak out. Try other ingredients such as crab, shrimp, pepperoni, mushrooms, cauliflower, broccoli, etc. Or even do the whole small block of the Velveeta cheese so theres a little extra leftovers and use that for crackers or even to pour on noodles.
