Created a recipe tonight for dinner that turned out quite well. If you are looking for something fast, easy, clean and full of protein, here it is: 2C. Water 1C. Red Quinoa...dash of salt Cook to instructions on the Quinoa box and set aside. 2 young yellow squash, sliced 1/4" thick and then quartered 1/3 C. sweet onion, diced in small pieces. Season with Lemon Pepper and season salt. Brown the squash and onion in 1 Tbs. EVOO Add 2 large home grown tomatoes that have been cut in chunks Once tomatoes have been added to the browned squash and onion and heated thru, add Quinoa. Gently mix together and remove from heat. Serve with a salad filled with your favorite veggies and you have a perfect blend of protein and healthy carbs. It was delicious!
