Crema Troubleshooting Bubbly / Quick Dissipation First thing to do is check the coffee’s roast date as coffee that is being used too soon after being roasted will still be producing carbon dioxide (degassing). This will cause your shot to have a lot of bubbles and or quick dissipation. Allow the beans another day or two to settle and degas in order to obtain a more stable crema, but be careful that you don’t let it go to long or you’ll end up with stale coffee and the flavour profile will change. No Crema on a Long Black Not to be confused with what we discussed above, no crema at all can be caused by stale coffee. First check the roast date and if the coffee is still fresh, ensure you are storing your coffee in a cool, dry place and not in the freezer or refrigerator. If your machine allows it check that the brew temperature is correct and make sure you don’t have any detergent residue on your cups.
